Northern Vietnamese family recipes, made with the same care and patience that has defined our kitchen for generations.
Hong Mai is named for the plum blossom, hồng mai, the winter flower that blooms when nothing else will. It is a symbol of resilience, beauty, and quiet strength in Vietnamese culture. We chose it because it reflects how we cook: with patience, with care, and with the belief that something beautiful can come from simple ingredients.
Our kitchen specializes in the refined traditions of Northern Vietnam. The bánh cuốn arrives translucent and still warm, filled with seasoned pork and wood ear mushroom. The phở is simmered for hours until the broth is clear and deeply fragrant. The bún chả is chargrilled over open flame and served with a tangle of fresh herbs and cool vermicelli.
Every dish is made to order. We roll the rice sheets by hand, simmer the broths from scratch, and arrange the herb plates with the same attention we would give a meal for our own family. There are no shortcuts here, no pre-made sauces, no reheated portions.
